Preparation

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the diced onion, sautéing until it becomes soft and translucent, about 3-4 minutes.
  • Toss in the minced garlic and ground beef, cooking until the beef is browned, breaking it apart with a spoon.
  • Drain any excess grease, and stir in the diced carrots and potatoes.

Cooking

  • Pour in the beef broth along with the Worcestershire sauce and Italian seasoning, and add salt and pepper to taste.
  • Bring everything to a boil.
  • Once boiling, reduce the heat and let it simmer for about 20 minutes, until the potatoes and carrots are tender.
  • When the veggies are tender, stir in the milk and heavy cream.
  • Gradually add the shredded cheddar cheese, stirring until it melts into gooey goodness.
