Ingredients
  

For the onion rings

  • 2 large Large white onions The sheer size allows for substantial rings.
  • 8 slices Mozzarella cheese slices Stretchy and melty cheese for flavor.
  • 1 cup All-purpose flour For the initial crispy coating.
  • 2 large Eggs For binding and coating.
  • 1 cup Breadcrumbs For the final crunchy coating.
  • 3 cups Oil for frying Ensure oil is hot before frying.

For serving

  • 1 cup Marinara sauce Ultimate dipping partner.

Instructions
 

Preparation

  • Cut the ends off the onions and peel away the outer layers. Slice each onion into rings about one centimeter thick.
  • Separate the inner rings from the outer ones and match smaller rings inside larger rings for stuffing.

Stuffing

  • Cut mozzarella into even strips and nestle strips into the space between each paired onion ring.
  • Place the prepared stuffed rings on a tray and freeze for about one hour.

Bread the onion rings

  • Get three bowls ready: one with flour, one with beaten eggs, and one with breadcrumbs.
  • Roll each stuffed onion ring in flour, dip it in egg, then roll it in breadcrumbs. For a thicker coating, repeat the egg and breadcrumbs.
  • Place each completed ring back in the freezer to chill.

Frying

  • Pour oil into a deep heavy pot and heat oil on medium-high until a thermometer reads 350°F.
  • Carefully lower a few rings into the oil at a time. Fry until deep golden brown and crisp.

Serving

  • Use tongs or a slotted spoon to lift out the finished rings and set them on a paper towel lined plate to drain off extra oil.
  • Serve immediately with hot marinara for dipping.

Notes

For a healthier option, consider using whole wheat breadcrumbs or gluten-free alternatives. Leftovers? Freeze for later use.
