  • 1 cup powdered sugar or your favorite sugar alternative Adjust sweetness to taste.

Fruit

  • 5 medium-sized fresh strawberries Use ripe berries for the best flavor.

Preparation

  • Bring the cream cheese or coconut cream to room temperature until very spreadable.
  • Prepare the strawberries by removing the stems, washing them well, and patting them dry. Cut the berries into chunks, then blend or smash them until they become a smooth puree.

Mixing

  • In a food processor, combine the cream cheese or coconut cream, yogurt, powdered sugar, vanilla (if using), and strawberry puree. Blend until smooth and light pink.

Chilling

  • Spoon the mousse into individual cups, smoothing the tops, cover with plastic wrap, and refrigerate for at least one hour.

Garnishing

  • Before serving, garnish with extra strawberry slices, mint, or a dollop of whipped cream. Serve cold.

Notes

Avoid overmixing to keep the mousse airy. Chill adequately for the best texture. Use ripe strawberries for optimal sweetness.
