Preparation

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and grease and flour a 9x13 inch baking pan.
  • In a large bowl, combine the vanilla cake mix, eggs, sour cream, vegetable oil, and vanilla extract. Mix thoroughly until you have a smooth batter.
  • In a small bowl, stir together the brown sugar and ground cinnamon.

Layering and Baking

  • Spread half of the cake batter into the prepared pan.
  • Sprinkle half of the brown sugar and cinnamon mixture over this layer, then add the diced strawberries.
  • Finish with the rest of the cake batter and top with the remaining brown sugar and cinnamon mixture.
  • Bake in the preheated oven for 30 to 35 minutes, until the edges are golden and the center springs back to touch.

Making the Icing

  • To make the strawberry cream icing, whisk together powdered sugar, milk, strawberry puree, and vanilla in a bowl until it’s light and creamy.
  • Once the cake is finished baking, allow it to cool for 10 to 15 minutes, then drizzle the strawberry cream icing over the warm cake.
