  • 4 pieces Ripe yellow peaches Soft and bursting with flavor.
  • 3/4 cup Caster sugar Finely milled sugar that dissolves easily.
  • 1 tablespoon Lemon juice Adds brightness to balance the sweetness.

Preparation

  • Start by slicing each luscious peach into eighths and carefully peel each section.
  • Add the peach slices along with caster sugar into the bowl of a food processor. Blend until completely smooth, scraping down the sides as needed.
  • Pour in the lemon juice directly into the peach puree and adjust to taste as you go.

Freezing

  • Pour the mixture into a shallow freezer-safe container, spread into an even layer, and cover tightly.
  • Freeze for six to seven hours until firm yet scoopable.

Serving

  • Serve the sorbet in chilled bowls, optionally garnished with fresh mint or thin slices of peach.

Notes

Store any leftover sorbet in a tightly covered container in the freezer for up to two weeks. Let sit out for five to ten minutes before scooping.
