Preparation

  • In a large pot, heat olive oil over medium heat until it shimmers.
  • Add the diced onion and sauté until translucent, about 5 minutes.
  • Introduce the minced garlic and continue to cook for 1-2 minutes.
  • Season the chicken breasts with salt and pepper and add them to the pot, cooking until browned, about 5-7 minutes.
  • Pour in the chicken broth, diced tomatoes, Italian seasoning, and red pepper flakes. Bring to a boil.
  • Reduce heat and allow the soup to simmer gently, then add the uncooked pasta. Cook until al dente, about 8-10 minutes.
  • Stir in heavy cream, fresh spinach, and sun-dried tomatoes. Let the spinach wilt for 2-3 minutes and adjust seasoning.
  • Remove chicken breasts from the soup, shred them, and return to the pot. Stir well.
  • Serve hot, drizzled with grated Parmesan cheese and garnished with fresh basil or parsley.

Notes

Leftover soup can be frozen for up to three months. When reheating, add a splash of chicken broth if too thick. Pair with garlic bread or a fresh salad.
