Instructions
 

Preparation

  • In a mixing bowl, combine almond flour, rolled oats, shredded coconut, and chia or flaxseeds if using.
  • Stir in maple syrup or honey, followed by lemon zest, lemon juice, vanilla extract, and salt until well combined.
  • If mixture is crumbly, add more maple syrup or lemon juice until it holds together.
  • Using your hands, scoop out and roll into 1-inch balls.
  • Roll the bliss balls in extra shredded coconut if desired.
  • Chill in the fridge for at least 30 minutes for best texture.
  • Serve and enjoy, storing leftovers in an airtight container.

Notes

For flavor variations, feel free to mix in other citrus zests or essential oils. These bliss balls are naturally gluten-free if using certified gluten-free oats.
