Preparation

  • Brush each slice of sourdough or baguette with extra virgin olive oil. Place under the broiler, toasting until golden brown and crispy.
  • In a medium bowl, combine halved cherry tomatoes, chopped basil, a drizzle of olive oil, flaky sea salt, and freshly cracked black pepper. Let sit for about 5 minutes.
  • Tear the burrata with your hands and gently spread it onto the toasted bread slices.
  • Top each slice with the tomato mixture and drizzle with more olive oil. Optionally add extra basil, balsamic glaze, and red pepper flakes.

Notes

Store leftover bruschetta in the fridge for up to 2 days. Best when fresh, reheating in an oven or toaster to maintain crispness is recommended.
