- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 large bell peppers, diced
- 1ยฝ cups cooked white rice
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 can (8 ounces) tomato sauce
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1ยฝ teaspoons Italian seasoning
- Salt and pepper, to taste
- 1ยฝ to 2 cups shredded cheddar cheese
Instructions
- Preheat the oven to 350ยฐF (175ยฐC). Grease a 9×13-inch baking dish.
- In a skillet, heat olive oil over medium heat and sautรฉ the diced onion for 3โ4 minutes until softened.
- Add the minced garlic and cook for another 30 seconds.
- Stir in the ground beef and cook until browned, draining any excess fat.
- Add the diced bell peppers and cook for 4โ5 minutes until tender.
- Incorporate the diced tomatoes, tomato sauce, tomato paste, Worcestershire sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Remove from heat and fold in the cooked rice.
- Transfer the mixture to the prepared baking dish and spread it out evenly.
- Sprinkle shredded cheddar cheese over the top.
- Bake for 20โ25 minutes until the cheese is melted and bubbly. Allow to rest before serving.
Notes
For extra flavor, add fresh basil or jalapeรฑos. This dish can be customized with different vegetables or meat substitutes.
