Instructions
- Preheat your oven to 350°F (180°C).
- Combine the shredded zucchini, green onions, eggs, sour cream, and melted butter in a large bowl.
- Stir in the shredded cheddar cheese.
- Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
- Add the dry ingredients to the wet mixture and stir gently until just combined.
- Pour the batter into a greased 9×5 inch loaf pan.
- Bake for 50-70 minutes, until a toothpick inserted comes out clean.
