A delightful and moist loaf that combines the subtle sweetness of zucchini with rich cheddar cheese, ideal for family gatherings or as a snack.

Ingredients

Scale
  • 1 1/2 cups zucchini, shredded
  • 1/4 cup green onion, sliced (optional)
  • 2 large eggs
  • 3/4 cup sour cream
  • 1/4 cup butter, melted and cooled
  • 1 1/2 cups cheddar cheese, shredded
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Combine the shredded zucchini, green onions, eggs, sour cream, and melted butter in a large bowl.
  3. Stir in the shredded cheddar cheese.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Add the dry ingredients to the wet mixture and stir gently until just combined.
  6. Pour the batter into a greased 9×5 inch loaf pan.
  7. Bake for 50-70 minutes, until a toothpick inserted comes out clean.
  8. Cool slightly before slicing and enjoy!

Notes

Squeeze excess moisture from the shredded zucchini to prevent sogginess. You can experiment with different types of cheese for varied flavors.
