Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 3 cups cream cheese, softened
  • 1 cup white chocolate, melted
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1 cup fresh strawberries, chopped
  • 2 tbsp sugar (for strawberries)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Grease a springform pan generously.
  3. Combine graham cracker crumbs with melted butter until resembling wet sand.
  4. Press the mixture into the base of your pan to form a crust.
  5. Beat cream cheese with sugar until creamy.
  6. Add melted white chocolate and mix until fully incorporated.
  7. Introduce eggs one at a time, mixing gently.
  8. Mix in vanilla extract and sour cream until smooth.
  9. Pour cheesecake filling over the crust.
  10. Bake for 50-60 minutes until the center has a slight jiggle.
  11. Toss strawberries with 2 tbsp of sugar and let sit for 15 minutes.
  12. Cool cheesecake completely on a wire rack.
  13. Refrigerate for at least 4 hours or overnight.
  14. Top with macerated strawberries before serving.
