- 1 cup fresh strawberries, chopped
- 2 tbsp sugar (for strawberries)
Instructions
- Preheat your oven to 325°F (163°C).
- Grease a springform pan generously.
- Combine graham cracker crumbs with melted butter until resembling wet sand.
- Press the mixture into the base of your pan to form a crust.
- Beat cream cheese with sugar until creamy.
- Add melted white chocolate and mix until fully incorporated.
- Introduce eggs one at a time, mixing gently.
- Mix in vanilla extract and sour cream until smooth.
- Pour cheesecake filling over the crust.
- Bake for 50-60 minutes until the center has a slight jiggle.
- Toss strawberries with 2 tbsp of sugar and let sit for 15 minutes.
- Cool cheesecake completely on a wire rack.
- Refrigerate for at least 4 hours or overnight.
- Top with macerated strawberries before serving.

For the best flavor, let the cheesecake chill overnight. Use softened cream cheese and avoid overmixing.
