  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract

  • 1/2 cup white chocolate chips, melted
  • 1/2 cup fresh raspberries, mashed
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1/2 cup white chocolate chips, melted (for frosting)
  • 1 tbsp heavy cream
  • 1 tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • 1 cup fresh raspberries (for sauce)
  • 1/4 cup sugar (for sauce)
  • 1 tbsp lemon juice (for sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Combine the flour, baking powder, and salt in a medium bowl; set aside.
  3. Beat the butter and granulated sugar together until light and fluffy.
  4. Introduce the eggs one at a time, then add the vanilla extract.
  5. Alternate adding the dry ingredients with the milk, starting and ending with the flour mixture.
  6. Fold in the melted white chocolate and mashed raspberries.
  7. Divide the batter between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. While the cakes cool, make the raspberry sauce by cooking raspberries, sugar, and lemon juice over medium heat until thickened.
  10. Make the frosting by beating butter and powdered sugar, then add melted white chocolate, heavy cream, vanilla extract, and salt.
  11. Assemble the cake by frosting between layers and on top, drizzling with raspberry sauce.
  12. Garnish with fresh raspberries and more raspberry sauce.

Notes

Use room temperature ingredients for better mixing. Ensure cakes are completely cool before frosting.
