Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Combine the flour, baking powder, and salt in a medium bowl; set aside.
- Beat the butter and granulated sugar together until light and fluffy.
- Introduce the eggs one at a time, then add the vanilla extract.
- Alternate adding the dry ingredients with the milk, starting and ending with the flour mixture.
- Fold in the melted white chocolate and mashed raspberries.
- Divide the batter between the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- While the cakes cool, make the raspberry sauce by cooking raspberries, sugar, and lemon juice over medium heat until thickened.
- Make the frosting by beating butter and powdered sugar, then add melted white chocolate, heavy cream, vanilla extract, and salt.
- Assemble the cake by frosting between layers and on top, drizzling with raspberry sauce.
- Garnish with fresh raspberries and more raspberry sauce.
Notes
Use room temperature ingredients for better mixing. Ensure cakes are completely cool before frosting.
