- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup fresh raspberries, mashed (or raspberry preserves)
- 1 cup white chocolate chips or melting wafers
- 1 tablespoon coconut oil or shortening (optional)
- Freeze-dried raspberry powder or crushed freeze-dried raspberries for garnish
- White chocolate drizzle (optional)
Instructions
- In a mixing bowl, combine softened cream cheese, powdered sugar, vanilla extract, and mashed raspberries until smooth and creamy.
- Using your hands, roll the cheesecake mixture into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
- In a microwave-safe bowl, melt the white chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
- Using a fork, dip each cheesecake ball into the melted white chocolate and allow excess chocolate to drip off.
- Sprinkle with freeze-dried raspberry powder or crushed raspberries while the chocolate is still soft.
- If desired, drizzle additional melted white chocolate over the tops and refrigerate until the coating is set, about 30 minutes.
Notes
Consider adding lemon or orange zest to the filling for added flavor, or mix in chopped nuts or crushed cookies.
