Description

Delightful bite-sized treats that combine creamy cheesecake with the freshness of raspberries, coated in smooth white chocolate.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup white chocolate chips, melted
  • 1/2 cup powdered sugar
  • 1/2 cup graham cracker crumbs
  • 1/2 cup fresh raspberries, mashed
  • 1 tsp vanilla extract
  • 1/4 cup white chocolate chips, for dipping
  • Fresh raspberries, for garnish

Instructions

  1. In a large mixing bowl, beat the softened cream cheese until it’s smooth.
  2. Add the melted white chocolate chips, powdered sugar, graham cracker crumbs, mashed raspberries, and vanilla extract. Mix everything well until fully combined.
  3. Chill the mixture in the fridge for about 30 minutes.
  4. Once chilled, use your hands to roll the mixture into balls, about 1 inch in diameter.
  5. Melt the remaining white chocolate chips in a microwave-safe bowl.
  6. Dip each cheesecake ball into the melted white chocolate, coating it evenly.
  7. Place the chocolate-coated balls on a baking sheet lined with parchment paper.
  8. Refrigerate for another 30 minutes to set the chocolate coating.
  9. Before serving, garnish with fresh raspberries.

Notes

For variations, consider adding lemon zest or rolling the balls in crushed nuts or coconut flakes.
