- 8 oz cream cheese, softened
- 1 cup white chocolate chips, melted
- 1/2 cup powdered sugar
- 1/2 cup graham cracker crumbs
- 1/2 cup fresh raspberries, mashed
- 1 tsp vanilla extract
- 1/4 cup white chocolate chips, for dipping
- Fresh raspberries, for garnish
Instructions
- In a large mixing bowl, beat the softened cream cheese until it’s smooth.
- Add the melted white chocolate chips, powdered sugar, graham cracker crumbs, mashed raspberries, and vanilla extract. Mix everything well until fully combined.
- Chill the mixture in the fridge for about 30 minutes.
- Once chilled, use your hands to roll the mixture into balls, about 1 inch in diameter.
- Melt the remaining white chocolate chips in a microwave-safe bowl.
- Dip each cheesecake ball into the melted white chocolate, coating it evenly.
- Place the chocolate-coated balls on a baking sheet lined with parchment paper.
- Refrigerate for another 30 minutes to set the chocolate coating.
- Before serving, garnish with fresh raspberries.
Notes
For variations, consider adding lemon zest or rolling the balls in crushed nuts or coconut flakes.
