- 1/2 cup white chocolate chips, melted
- 1/4 cup raspberry puree
- 1 cup graham cracker crumbs

- Fresh raspberries, for garnish (optional)
Instructions
- Beat the softened cream cheese until smooth and creamy.
- Add the powdered sugar and vanilla extract, mixing until fully combined.
- Stir in the melted white chocolate chips and raspberry puree, mixing until well incorporated.
- Gradually add the graham cracker crumbs and mix until the consistency resembles dough.
- Form small balls, each about 1 inch in diameter, and place them on a parchment-lined baking sheet.
- Chill the cheesecake balls in the refrigerator for at least 1 hour.
- Melt the remaining white chocolate chips and dip each cheesecake ball thoroughly.
- Return the coated balls to the parchment paper to set the chocolate.
- Top each cheesecake ball with a fresh raspberry or drizzle with extra melted white chocolate.
- Refrigerate for at least 30 minutes before serving.
