Ingredients

  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup white chocolate chips, melted
  • 1/4 cup raspberry puree
  • 1 cup graham cracker crumbs
  • 1/2 cup white chocolate chips, for coating
  • Fresh raspberries, for garnish (optional)

Instructions

  1. Beat the softened cream cheese until smooth and creamy.
  2. Add the powdered sugar and vanilla extract, mixing until fully combined.
  3. Stir in the melted white chocolate chips and raspberry puree, mixing until well incorporated.
  4. Gradually add the graham cracker crumbs and mix until the consistency resembles dough.
  5. Form small balls, each about 1 inch in diameter, and place them on a parchment-lined baking sheet.
  6. Chill the cheesecake balls in the refrigerator for at least 1 hour.
  7. Melt the remaining white chocolate chips and dip each cheesecake ball thoroughly.
  8. Return the coated balls to the parchment paper to set the chocolate.
  9. Top each cheesecake ball with a fresh raspberry or drizzle with extra melted white chocolate.
  10. Refrigerate for at least 30 minutes before serving.
