Description

Delight in these creamy White Chocolate Raspberry Cheesecake Balls, a perfect blend of sweet-tart raspberry and rich white chocolate, ideal for any occasion.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup white chocolate chips, melted
  • 1/2 cup raspberries, mashed
  • 1 cup graham cracker crumbs
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup white chocolate chips (for coating), melted
  • 1/4 cup crushed graham crackers (for coating)

Instructions

  1. Gather all your ingredients. In a mixing bowl, beat the cream cheese with the raspberries and powdered sugar until smooth.
  2. Melt 1/2 cup of white chocolate chips in a microwave-safe bowl.
  3. Add the melted chocolate to your cream cheese mixture along with the vanilla extract, stirring until combined.
  4. Fold in the graham cracker crumbs evenly.
  5. Form small balls, approximately 1 inch in diameter, and place them on a parchment-lined tray.
  6. Chill the balls in the freezer for at least 60 minutes until firm.
  7. Melt the remaining white chocolate chips.
  8. Dip each firm cheesecake ball into the melted white chocolate, allowing excess to drip off.
  9. Roll them in crushed graham crackers and place on the tray.
  10. Return to the freezer for 15 minutes to set the coating.
  11. Serve chilled and enjoy!

Notes

Consider adding lemon zest for extra flavor. Feel free to involve children in the rolling and coating process for a fun activity.
