A deliciously comforting Weeknight Wonton Soup that combines savory chicken or turkey with tender dumplings in a fragrant broth filled with bok choy and mushrooms.

- 1 package wonton wrappers
- 1 pound ground chicken or turkey
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 4 cups chicken broth
- 2 cups water
- 2 cups bok choy, chopped
- 1 cup sliced mushrooms
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Combine ground chicken or turkey, soy sauce, sesame oil, ginger, and minced garlic in a mixing bowl. Stir well until well incorporated.
- Take a wonton wrapper and place a teaspoon of the filling in the center. Moisten edges with water and fold into a triangle, pressing to seal.
- Bring the corners of the triangle together and pinch to form the wonton shape. Repeat with remaining wrappers and filling.
- Bring chicken broth and water to a boil in a large pot. Carefully add wontons, cooking for 5-7 minutes until they float to the surface.
- Stir in chopped bok choy and sliced mushrooms, cooking for an additional 2-3 minutes until tender. Season with salt and pepper to taste.
- Ladle soup into bowls and garnish with sliced green onions. Enjoy warm!
Notes
Make sure to cover the wontons with a damp towel to prevent them from drying out. For added flavor, consider chili oil or toasted sesame oil as toppings.
