Description

A delightful side dish combining roasted sweet potatoes, maple syrup, goat cheese, and walnuts for a perfect blend of flavors and textures.

Ingredients

Scale
  • 4 medium sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 1 cup goat cheese, crumbled
  • 1/2 cup walnuts, chopped
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato cubes with olive oil, maple syrup, cinnamon, salt, and pepper in a large bowl.
  3. Spread the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.
  4. Slide the baking sheet into the oven and roast for 25-30 minutes, tossing halfway through.
  5. Toast the chopped walnuts in a dry skillet over medium heat for about 5 minutes, stirring frequently.
  6. Remove the sweet potatoes from the oven once tender and golden.
  7. Top the sweet potatoes with crumbled goat cheese and toasted walnuts.
  8. Garnish with fresh parsley before serving.

Notes

For additional flavor, consider adding herbs like thyme or rosemary. Do not overcrowd the baking sheet for optimal caramelization.
