Description

Experience the comforting, soul-warming embrace of Vegetarian Creamy Spinach & Mushroom Lasagna with Ricotta and Mozzarella. A delightful blend of rich and creamy layers of pasta, ricotta, mozzarella, mushrooms, and spinach.


Ingredients

  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 10 oz mushrooms, sliced
  • 10 oz fresh spinach leaves
  • 1 (15 oz) container ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper, to taste
  • 1/2 teaspoon nutmeg (optional)
  • 12 lasagna noodles, cooked and drained
  • 1 1/2 cups shredded mozzarella cheese (for topping)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the finely chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Introduce the minced garlic and sliced mushrooms, sautéing for about 7 minutes.
  4. Toss in the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Remove from heat and season with salt and pepper.
  6. Combine ricotta cheese, 1 1/2 cups of shredded mozzarella, Parmesan, egg, and nutmeg in a large mixing bowl.
  7. Preheat your oven to 350°F (175°C).
  8. Spread a thin layer of the mushroom and spinach mixture at the bottom of a 9×13-inch baking dish.
  9. Layer 4 lasagna noodles over the mixture, followed by a layer of the cheese mixture, then the mushroom-spinach mixture.
  10. Repeat this layering process two more times, finishing with the mushroom-spinach mixture on top.
  11. Cover with the remaining shredded mozzarella.
  12. Bake covered with aluminum foil for 30 minutes, then uncover and bake for an additional 10-15 minutes.
  13. Allow to rest for 10 minutes before slicing and serving.
  14. Garnish with fresh parsley if desired.

Notes

Make sure lasagna noodles are slightly undercooked for best results. Allow lasagna to rest before slicing for clean layers.
