- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 10 oz mushrooms, sliced
- 10 oz fresh spinach leaves
- 1 (15 oz) container ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- Salt and pepper, to taste
- 1/2 teaspoon nutmeg (optional)
- 12 lasagna noodles, cooked and drained
- 1 1/2 cups shredded mozzarella cheese (for topping)
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the finely chopped onion to the skillet and cook until softened, about 5 minutes.
- Introduce the minced garlic and sliced mushrooms, sautéing for about 7 minutes.
- Toss in the fresh spinach and cook until wilted, about 2-3 minutes.
- Remove from heat and season with salt and pepper.
- Combine ricotta cheese, 1 1/2 cups of shredded mozzarella, Parmesan, egg, and nutmeg in a large mixing bowl.
- Preheat your oven to 350°F (175°C).
- Spread a thin layer of the mushroom and spinach mixture at the bottom of a 9×13-inch baking dish.
- Layer 4 lasagna noodles over the mixture, followed by a layer of the cheese mixture, then the mushroom-spinach mixture.
- Repeat this layering process two more times, finishing with the mushroom-spinach mixture on top.
- Cover with the remaining shredded mozzarella.
- Bake covered with aluminum foil for 30 minutes, then uncover and bake for an additional 10-15 minutes.
- Allow to rest for 10 minutes before slicing and serving.
- Garnish with fresh parsley if desired.
Notes
Make sure lasagna noodles are slightly undercooked for best results. Allow lasagna to rest before slicing for clean layers.
