- 1 stick Butter, Softened
- 2 cups Powdered Sugar
- 1 tbsp Vanilla Extract
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the eggs, crushed pineapple (including juice), and optional chopped pecans in a medium bowl.
- Combine the all-purpose flour, granulated sugar, and baking soda in a large bowl.
- Fold the wet mixture into the dry ingredients until just combined.
- Prepare a 9×13 inch baking dish by greasing it with butter or non-stick spray.
- Bake the batter in the prepared dish for 30-35 minutes, checking for doneness with a toothpick.
- Cool the cake completely on a wire rack.
- Make the frosting by blending softened cream cheese, butter, powdered sugar, and vanilla extract until smooth.
- Frost the cooled cake with the cream cheese frosting.
Notes
For a more intense flavor, consider using fresh pineapple. You can also make it a layered cake by dividing the batter into two round pans.
