Description

A moist and flavorful dessert infused with crushed pineapple and topped with a velvety cream cheese frosting.


Ingredients

  • 2 cups Granulated Sugar
  • 2 tsp Baking Soda
  • 2 Eggs
  • 1 20-oz can Crushed Pineapple with Juice
  • 1 cup Chopped Toasted Pecans (optional)
  • 8 ounces Cream Cheese, Softened
  • 1 stick Butter, Softened
  • 2 cups Powdered Sugar
  • 1 tbsp Vanilla Extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the eggs, crushed pineapple (including juice), and optional chopped pecans in a medium bowl.
  3. Combine the all-purpose flour, granulated sugar, and baking soda in a large bowl.
  4. Fold the wet mixture into the dry ingredients until just combined.
  5. Prepare a 9×13 inch baking dish by greasing it with butter or non-stick spray.
  6. Bake the batter in the prepared dish for 30-35 minutes, checking for doneness with a toothpick.
  7. Cool the cake completely on a wire rack.
  8. Make the frosting by blending softened cream cheese, butter, powdered sugar, and vanilla extract until smooth.
  9. Frost the cooled cake with the cream cheese frosting.

Notes

For a more intense flavor, consider using fresh pineapple. You can also make it a layered cake by dividing the batter into two round pans.
