Ingredients

  • 2 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 tsp vanilla extract
  • Royal icing (2 large egg whites, 1 1/2 cups powdered sugar, 1/2 tsp lemon juice)
  • Food coloring for decoration (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. Cream together the butter and brown sugar until light and fluffy.
  4. Add the egg, molasses, and vanilla, mixing until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  6. Divide the dough in half, wrap in plastic, and chill for at least 1 hour.
  7. Roll out the chilled dough to 1/4 inch thickness and cut shapes with cookie cutters.
  8. Bake for 8-10 minutes or until golden, then cool on a wire rack.
  9. Beat the egg whites, powdered sugar, and lemon juice to make royal icing.
  10. Decorate the cookies with icing, creating winter village designs.
  11. Let the icing harden for 1-2 hours before serving.

Notes

Chill cookie dough to prevent spreading. Use parchment paper for easy baking.
