Description

A comforting and delightful dish that blends rich tomato flavors with creamy cheddar dumplings.

Ingredients

Scale
  • 2 cans crushed tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • Fresh basil for garnish (optional)

Instructions

  1. Sauté the diced onion and minced garlic in a large pot over medium heat until soft and translucent, about 5-7 minutes.
  2. Add the crushed tomatoes and vegetable broth to the pot. Stir in the sugar, salt, and pepper, then bring the mixture to a gentle simmer and cook for about 20 minutes.
  3. In a mixing bowl, combine the flour, baking powder, and salt for the dumplings. Stir in the shredded cheddar cheese.
  4. Pour in the melted butter and milk, mixing until just combined.
  5. Drop spoonfuls of the dumpling mixture into the simmering soup. Cover and cook for 10-15 minutes.
  6. Serve the soup in bowls and garnish with fresh basil, if desired.

Notes

For added depth, try using high-quality canned tomatoes, a pinch of red pepper flakes, or different cheeses.
