Ingredients

  • 23 tablespoons Thai red curry paste
  • 1 tablespoon chopped pickled ginger

  • 1/3 cup sweet Thai chili sauce
  • 6 cloves garlic, chopped
  • 1 tablespoon fresh grated ginger
  • 2 tablespoons chili paste (like Thai curry or Gochujang)
  • 2 pounds flank steak, cubed
  • Rice or coconut rice, for serving
  • Limes, for squeezing
  • Avocado, sliced
  • Sesame seeds, for garnish
  • Cilantro, for garnish

Instructions

  1. Make the Peanut Sauce: Combine peanut butter, tamari, Thai red curry paste, pickled ginger, and toasted sesame oil in a jar or blender. Blend until smooth, adding water as needed.
  2. Marinate the Steak: Whisk together sweet Thai chili sauce, tamari, garlic, grated ginger, and chili paste. Toss in flank steak and let marinate for at least 10 minutes.
  3. Prepare Skewers: Thread the marinated beef onto skewers, leaving space between each piece.
  4. Grill the Skewers: Preheat grill to medium-high heat. Grill skewers for 8 to 12 minutes, turning occasionally, until desired doneness.
  5. Serve: Arrange skewers over rice or coconut rice. Garnish with lime wedges, avocado slices, sesame seeds, and cilantro. Serve peanut sauce on the side.

Notes

For deeper flavor, marinate steak up to 1 hour. Add vegetables to skewers for extra color and crunch.
