  • 6 ounces Thin Rice Noodles, cooked and chilled
  • 1/4 cup Cilantro, chopped
  • 2 tablespoons Fresh Mint
  • 2 tablespoons Peanuts, chopped

Instructions

  1. Combine all dressing ingredients—sesame oil, rice vinegar, honey, minced garlic, grated ginger, chili flakes, and salt—in a small jar. Close the jar tightly and shake vigorously until well combined. Set aside for later.
  2. Cook the frozen spring rolls according to the package instructions, usually about 12 minutes until golden brown and crispy. Once cooked, cool for 5 minutes before slicing them in half for easier serving.
  3. Arrange the cooked and chilled rice noodles, sliced carrots, julienned cucumber, and red bell pepper in a large bowl or platter.
  4. Drizzle the peanut dressing generously over the noodles and vegetables, watching how the flavors meld beautifully.
  5. Top your noodle bowl with halved spring rolls, fresh chopped cilantro, mint leaves, and a sprinkle of chopped peanuts for that satisfying crunch. Serve this delicious meal right away!
