  • 1 cup fresh pineapple, diced
  • 1 tbsp sesame oil
  • 2 green onions, chopped
  • 1/4 cup red bell pepper, diced
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. Prepare the Teriyaki Shrimp: In a medium bowl, combine teriyaki sauce, soy sauce, sesame oil, honey, garlic, ginger, and red pepper flakes. Add the shrimp, tossing to coat. Marinate for at least 15 minutes.
  2. Cook the Shrimp: Heat a large skillet over medium-high heat. Add marinated shrimp and cook for 2-3 minutes per side until pink. Remove from heat.
  3. Prepare the Pineapple Rice: In the same skillet, heat sesame oil and add chopped green onions, diced red bell pepper, and pineapple. Sauté for 2-3 minutes.
  4. Combine the Rice: Add cooked rice, breaking it up, and stir in soy sauce, rice vinegar, garlic powder, and season with salt and pepper. Sauté for another 2-3 minutes.
  5. Assemble the Stack: Layer the pineapple rice at the bottom, followed by teriyaki shrimp. Press gently to shape the stack.
  6. Garnish and Serve: Top with cilantro, sesame seeds, and a squeeze of lime juice. Serve immediately.

Notes

For additional flavor, consider adding crushed cashews or red chili. Marinating the shrimp longer enhances flavor.
