  • 1 1/2 cups fresh blueberries
  • 2 large eggs
  • 1/4 cup golden honey
  • 1 tsp vanilla extract
  • 1/2 cup Greek yogurt
  • 1/4 cup rolled oats
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp melted butter
  • 1 tbsp brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the creamy cottage cheese, eggs, Greek yogurt, honey, vanilla extract, lemon zest, and lemon juice until smooth.
  3. Stir in the rolled oats, baking powder, and salt.
  4. Gently fold in the blueberries.
  5. Grease a small baking dish (about 8×8 inches).
  6. Pour the mixture into the greased dish and spread evenly.
  7. Top with melted butter and sprinkle brown sugar over the top.
  8. Bake for 30-35 minutes, or until golden and a toothpick comes out clean.
  9. Cool for 10-15 minutes before slicing.
