- 1 1/2 cups fresh blueberries
- 2 large eggs
- 1/4 cup golden honey
- 1 tsp vanilla extract
- 1/2 cup Greek yogurt
- 1/4 cup rolled oats
- 1 tbsp lemon zest
- 1 tbsp lemon juice
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp melted butter
- 1 tbsp brown sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the creamy cottage cheese, eggs, Greek yogurt, honey, vanilla extract, lemon zest, and lemon juice until smooth.
- Stir in the rolled oats, baking powder, and salt.
- Gently fold in the blueberries.
- Grease a small baking dish (about 8×8 inches).
- Pour the mixture into the greased dish and spread evenly.
- Top with melted butter and sprinkle brown sugar over the top.
- Bake for 30-35 minutes, or until golden and a toothpick comes out clean.
- Cool for 10-15 minutes before slicing.
