Ingredients

  • 2 1/4 cups sifted cake or all-purpose flour
  • 1 1/2 cups fine granulated white sugar
  • 1/2 cup soft unsalted butter
  • 1/3 cup canola or vegetable oil
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • 12 tablespoons vanilla extract
  • 4 large eggs
  • 1/2 cup whole-fat milk
  • 3 ripe pears, peeled and thinly sliced
  • 1/4 cup brown sugar
  • 3/4 teaspoon cinnamon
  • 2 tablespoons confectioner’s sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice the pears into thin pieces.
  3. Whip together the sugar and butter in a mixing bowl with an electric mixer for about one minute.
  4. Add the vanilla extract, optional lemon zest, and eggs, mixing on high speed for 1-2 minutes until pale and fluffy.
  5. Incorporate the baking powder, sifted flour, and salt into the mixture, stirring for one more minute.
  6. Gradually add the milk and oil at low speed, mixing until the batter thickens.
  7. Prepare a 10 x 3 inch round springform pan by lining it with parchment paper and greasing it. Pour the batter into the pan and spread evenly.
  8. Add the sliced pears on top and sprinkle with cinnamon and brown sugar.
  9. Bake in the oven for approximately one hour.
  10. Check for doneness with a skewer; it should come out clean.
  11. Remove from the oven, cover with a towel, and let cool for up to one hour.
  12. Dust the top with confectioner’s sugar before serving.

Notes

Consider adding nuts like walnuts or pecans for extra crunch. Use canned pears in syrup for a more intense pear taste.
