- 2 1/4 cups sifted cake or all-purpose flour
- 1 1/2 cups fine granulated white sugar
- 1/2 cup soft unsalted butter
- 1/3 cup canola or vegetable oil
- 3 teaspoons baking powder
- 1/8 teaspoon salt
- 1–2 tablespoons vanilla extract
- 4 large eggs
- 1/2 cup whole-fat milk
- 3 ripe pears, peeled and thinly sliced
- 1/4 cup brown sugar
- 3/4 teaspoon cinnamon
- 2 tablespoons confectioner’s sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and slice the pears into thin pieces.
- Whip together the sugar and butter in a mixing bowl with an electric mixer for about one minute.
- Add the vanilla extract, optional lemon zest, and eggs, mixing on high speed for 1-2 minutes until pale and fluffy.
- Incorporate the baking powder, sifted flour, and salt into the mixture, stirring for one more minute.
- Gradually add the milk and oil at low speed, mixing until the batter thickens.
- Prepare a 10 x 3 inch round springform pan by lining it with parchment paper and greasing it. Pour the batter into the pan and spread evenly.
- Add the sliced pears on top and sprinkle with cinnamon and brown sugar.
- Bake in the oven for approximately one hour.
- Check for doneness with a skewer; it should come out clean.
- Remove from the oven, cover with a towel, and let cool for up to one hour.
- Dust the top with confectioner’s sugar before serving.
Notes
Consider adding nuts like walnuts or pecans for extra crunch. Use canned pears in syrup for a more intense pear taste.
