- 4 slices of your favorite bread (sourdough or whole wheat)
- 1/2 cup ricotta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach, chopped
- 2 tbsp butter (softened, for spreading)
- 1 cup shredded mozzarella cheese
- 1 tbsp olive oil (optional, for grilling)
- Salt and pepper, to taste
Instructions
- Prepare the filling by mixing the ricotta cheese with the chopped sun-dried tomatoes and fresh spinach in a small bowl. Season the mixture with salt and pepper.
- Assemble your sandwiches by spreading a generous amount of the ricotta mixture on one slice of bread and sprinkling shredded mozzarella on top before closing with another slice.
- Grill the sandwiches in a preheated skillet over medium heat, spreading softened butter on the outside. If desired, drizzle olive oil in the pan for a crispy exterior.
- Cook for about 3-5 minutes on each side, until the bread turns golden brown and the cheese melts. Serve hot, cut in half to reveal the filling.
