  • 1 cup finely chopped onions
  • 6 cloves garlic, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 ½ cups cooked white rice
  • 1 can (15 oz) tomato sauce
  • 2 cups shredded cheddar cheese
  • Cooking spray

Instructions

  1. Prepare the Peppers: Wash the bell peppers, trim off the tops, and remove the ribs and seeds.
  2. Cook the Filling: In a skillet, spray with cooking oil and add ground beef and onions. Cook until beef is browned and onions are translucent, then add garlic, salt, and pepper.
  3. Combine the Ingredients: Mix the beef mixture with cooked rice, ½ cup tomato sauce, and 1 cup cheddar cheese.
  4. Stuff the Peppers: Fill each pepper with the mixture and place them upright in a slow cooker.
  5. Add the Sauce: Pour remaining tomato sauce over the stuffed peppers.
  6. Slow Cook: Cover and cook on low for 4 ½ to 5 ½ hours.
  7. Cheese It Up: In the last 5 to 10 minutes, sprinkle remaining cheese on top.
  8. Serve and Enjoy: Serve warm with optional toppings like extra cheese or fresh herbs.
