Description

A delicious Strawberry Swirl Cheesecake that captures the essence of summer with creamy cheesecake and vibrant strawberry swirls.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup strawberry puree
  • 2 tablespoons sugar (for the strawberry swirl)
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter in a medium bowl.
  3. Press this mixture into the bottom of a springform pan to form a crust.
  4. Bake the crust for about 10 minutes, then set aside to cool.
  5. Beat the cream cheese in a large bowl until smooth.
  6. Add in 1 cup of granulated sugar and vanilla extract, mixing until combined.
  7. Incorporate the eggs, one at a time, mixing well after each.
  8. Stir in the sour cream until smooth.
  9. Mingle the strawberry puree, 2 tablespoons sugar, and lemon juice in a separate bowl.
  10. Pour the cream cheese mixture over the cooled crust.
  11. Spoon dollops of strawberry puree on top and swirl gently with a knife.
  12. Bake for 55-60 minutes, until the center is slightly jiggy.
  13. Cool in the oven for 1 hour, then remove and cool at room temperature.
  14. Chill in the fridge for at least 4 hours or overnight.

Notes

Allow cream cheese to reach room temperature for a smoother batter. Use a springform pan for easy removal.
