- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup strawberry puree
- 2 tablespoons sugar (for the strawberry swirl)
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 325°F (163°C).
- Combine the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter in a medium bowl.
- Press this mixture into the bottom of a springform pan to form a crust.
- Bake the crust for about 10 minutes, then set aside to cool.
- Beat the cream cheese in a large bowl until smooth.
- Add in 1 cup of granulated sugar and vanilla extract, mixing until combined.
- Incorporate the eggs, one at a time, mixing well after each.
- Stir in the sour cream until smooth.
- Mingle the strawberry puree, 2 tablespoons sugar, and lemon juice in a separate bowl.
- Pour the cream cheese mixture over the cooled crust.
- Spoon dollops of strawberry puree on top and swirl gently with a knife.
- Bake for 55-60 minutes, until the center is slightly jiggy.
- Cool in the oven for 1 hour, then remove and cool at room temperature.
- Chill in the fridge for at least 4 hours or overnight.
Notes
Allow cream cheese to reach room temperature for a smoother batter. Use a springform pan for easy removal.
