- Combine 1 1/2 cups flour, 1/2 teaspoon baking soda, and 1/2 teaspoon salt in a mixing bowl.
- Beat together 1/2 cup butter and 1 cup brown sugar until fluffy.
- Add 1 egg and 1 teaspoon vanilla extract, mixing until blended.
- Incorporate the dry ingredients into the wet mixture, stirring gently.
- Fold in 1/2 cup crushed freeze-dried strawberries.
- Beat 4 oz cream cheese with 1/4 cup powdered sugar and 1/4 teaspoon vanilla extract until smooth.
- Scoop about a tablespoon of cookie dough, flatten it, and place a spoonful of the cheesecake filling and a dollop of strawberry jam in the center.
- Wrap the cookie dough around the filling and seal tightly.
- Place on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until golden brown.
- Cool on a wire rack.
