- 1/2 cup juicy pineapple chunks
- 1/2 cup creamy coconut cream
- 1/2 cup Malibu rum
- 1 tablespoon lime juice
- 1–2 tablespoons honey or sugar (optional)
- Ice cubes
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 2 tablespoons Malibu rum (for frosting)
- Dash of vanilla extract
- Pinch of salt
Instructions
- Start by placing your fresh strawberries, pineapple chunks, coconut cream, Malibu rum, lime juice, and optional sweetness into a blender.
- Blend everything until it reaches a smooth and creamy consistency.
- Toss in your ice cubes and blend again, adjusting the texture to your preference.
- Whip your softened butter until it becomes creamy and fluffy.
- Gradually introduce your powdered sugar while continuing to beat it until smooth.
- Add in the Malibu rum and vanilla extract, mixing until combined.
- Pour the strawberry piƱa colada mixture into glasses and top with a dollop of the Malibu frosting.
- Garnish with a fresh strawberry or a slice of pineapple before serving.
Notes
For a non-alcoholic version, replace Malibu rum with extra coconut cream or fruit juice.
