- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 package (8 oz) cream cheese, softened
- 1/3 cup powdered sugar

- 2 cups fresh strawberries, hulled and chopped
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 packet unflavored gelatin
- 1 cup heavy whipping cream, chilled
- 2 tablespoons powdered sugar
- Optional: Fresh strawberries, whipped cream, or strawberry glaze for topping
Instructions
- Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well and press into the bottom of a springform pan. Chill for 15 minutes.
- Make the cream cheese layer: Beat cream cheese, powdered sugar, and vanilla until smooth. In another bowl, whip 1/2 cup heavy cream to stiff peaks and fold into the cream cheese mixture. Spread over the chilled crust and refrigerate.
- Cook the strawberries: In a saucepan, combine hulled strawberries, granulated sugar, and lemon juice. Simmer for 6-8 minutes until softened. Blend into a smooth puree and cool slightly.
- Bloom the gelatin: In a small bowl, mix gelatin with 2 tablespoons water and let sit for 5 minutes. Heat until dissolved and stir into the cooled strawberry puree.
- Make the mousse: In a clean bowl, whip the remaining heavy cream with 2 tablespoons powdered sugar to stiff peaks. Fold the whipped cream into the strawberry mixture.
- Assemble the cake: Pour the mousse over the cream cheese layer in the springform pan and smooth the top. Cover and refrigerate for at least 4 hours until set.
- Garnish: Before serving, top with fresh strawberries, whipped cream, or strawberry glaze. Slice and enjoy!
Notes
For the best results, use room temperature cream cheese and whip heavy cream to stiff peaks. Consider chilling the mousse overnight for enhanced flavor.
