Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
- Sift together the flour, baking powder, and salt in a medium bowl; set aside.
- Beat the softened butter and sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, blending in the vanilla extract, lemon zest, and fresh lemon juice.
- Gradually mix in the dry ingredients alternating with the buttermilk until just combined.
- Fold in the chopped strawberries gently to maintain the airy texture.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, checking doneness with a toothpick.
- Cool the cakes in the pans for about 10 minutes before transferring them to wire racks to cool completely.
- For the frosting, beat the softened butter and powdered sugar until smooth, then mix in the lemon juice, vanilla extract, and heavy cream until fluffy.
- Fold in the pureed strawberries and frost the cooled cakes generously between layers and on top.
