Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. Sift together the flour, baking powder, and salt in a medium bowl; set aside.
  3. Beat the softened butter and sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, blending in the vanilla extract, lemon zest, and fresh lemon juice.
  5. Gradually mix in the dry ingredients alternating with the buttermilk until just combined.
  6. Fold in the chopped strawberries gently to maintain the airy texture.
  7. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, checking doneness with a toothpick.

  9. For the frosting, beat the softened butter and powdered sugar until smooth, then mix in the lemon juice, vanilla extract, and heavy cream until fluffy.
