  • 12 tablespoons heavy cream (for frosting)
  • 1 cup fresh strawberries, diced (for filling)
  • 2 tablespoons sugar (for filling)
  • 1 tablespoon lemon juice (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Beat the softened butter and granulated sugar in a large bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract, lemon zest, and strawberry puree until combined.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, and mix until smooth.
  7. Divide the batter between the prepared pans and bake for 25-30 minutes.
  8. Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Combine the diced strawberries, sugar, and lemon juice in a small bowl for the filling.
  10. Beat the softened butter for the frosting until creamy, then gradually add the powdered sugar, lemon juice, lemon zest, and salt.
  11. Adjust the frosting consistency with heavy cream as needed.
  12. Place one cake layer on a serving plate, top with strawberry filling, then frosting.
  13. Top with the second cake layer and frost the top and sides with buttercream.
  14. Garnish with fresh strawberries or lemon zest before serving.
