Instructions
- Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them.
- Whisk together the all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
- Cream the softened butter and granulated sugar together in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, incorporating each fully before the next. Stir in the vanilla extract and lemon zest.
- Gradually add the dry ingredients to the butter mixture, alternating with buttermilk and fresh lemon juice.
- Fold in the chopped strawberries gently.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
- Prepare the strawberry filling by combining sliced strawberries, sugar, and lemon juice in a bowl.
- Beat the frosting ingredients together until smooth and fluffy.
- Stack the layers with filling in between, then frost the top and sides.
- Garnish with fresh strawberry slices and lemon zest, then serve.
