Ingredients

  • 1/2 cup unsalted butter, softened to a creamy texture
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons strawberry gelatin powder
  • 2 tablespoons milk
  • 1/2 cup strawberry jam
  • 20 chocolate truffle candies
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, and almond extract (if using), mixing until fully combined.
  4. Whisk together the flour, baking powder, salt, and strawberry gelatin powder in a separate bowl.
  5. Gradually add the dry mixture to the wet mixture alternately with the milk, mixing until a dough forms.
  6. Roll the dough into tablespoon-sized balls and place them on a lined baking sheet.
  7. Make an indentation in the center of each cookie using your thumb.
  8. Fill each indentation with a small spoonful of strawberry jam.
  9. Place a chocolate truffle in the center of the jam.
  10. Bake for 10-12 minutes until the edges are lightly golden.
  11. Remove and let cool before dusting with powdered sugar.

Notes

Use room-temperature butter for better texture and feel free to adjust the flavor of the gelatin or use different kinds of chocolate truffles.
