- 2–3 tablespoons strawberry puree (or strawberry jam)
- 1/2 teaspoon vanilla extract
- Pink food coloring (optional)
- Halved maraschino cherries or diced strawberries (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Line two baking sheets with parchment paper or silicone baking mats.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and almond extract until fully incorporated.
- Whisk together the all-purpose flour, baking powder, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Stir in the maraschino cherry juice and chopped cherries.
- Drop tablespoonfuls of cookie dough onto the prepared baking sheets, spaced 2 inches apart.
- Flatten each dough ball slightly.
- Bake for 10-12 minutes until edges are golden brown.
- Cool on baking sheets before transferring to wire racks.
- Prepare the strawberry frosting by beating together softened butter and powdered sugar until smooth.
- Frost the cooled cookies with the strawberry frosting.
- Garnish with halved maraschino cherries or diced strawberries.
- Serve and enjoy these sweet delights!

For a richer flavor, consider adding a pinch of cinnamon or nutmeg to the dough.
