Delightful cookies combining the sweetness of strawberries and tartness of cherries, topped with a creamy strawberry frosting.


Ingredients

  • 1 large egg
  • 1/2 teaspoon almond extract
  • 1 1/2 cups (190 g) all-purpose flour

  • 1/4 teaspoon salt
  • 1/3 cup (80 ml) maraschino cherry juice
  • 1/2 cup (75 g) chopped maraschino cherries
  • 1/2 cup (115 g) unsalted butter, softened (for frosting)
  • 2 cups (250 g) powdered sugar
  • 23 tablespoons strawberry puree (or strawberry jam)
  • 1/2 teaspoon vanilla extract
  • Pink food coloring (optional)
  • Halved maraschino cherries or diced strawberries (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper or silicone baking mats.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and almond extract until fully incorporated.
  5. Whisk together the all-purpose flour, baking powder, baking soda, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  7. Stir in the maraschino cherry juice and chopped cherries.
  8. Drop tablespoonfuls of cookie dough onto the prepared baking sheets, spaced 2 inches apart.
  9. Flatten each dough ball slightly.
  10. Bake for 10-12 minutes until edges are golden brown.
  11. Cool on baking sheets before transferring to wire racks.
  12. Prepare the strawberry frosting by beating together softened butter and powdered sugar until smooth.
  13. Frost the cooled cookies with the strawberry frosting.
  14. Garnish with halved maraschino cherries or diced strawberries.
  15. Serve and enjoy these sweet delights!
