- 1/2 cup (115 g) unsalted butter, softened
- 3/4 cup (150 g) granulated sugar
- 1 large egg
- 1/2 teaspoon almond extract
- 1 1/2 cups (190 g) all-purpose flour
- 1/2 teaspoon baking powder

- 1/4 teaspoon salt
- 1/3 cup (80 ml) maraschino cherry juice
- 1/2 cup (75 g) chopped maraschino cherries
- For the Strawberry Frosting:
- 1/2 cup (115 g) unsalted butter, softened
- 2 cups (250 g) powdered sugar
- 2–3 tablespoons strawberry puree (or strawberry jam)
- 1/2 teaspoon vanilla extract
- Pink food coloring (optional)
- For Garnish:
- Halved maraschino cherries or diced strawberries
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and almond extract, mixing until well combined.
- Whisk together the all-purpose flour, baking powder, baking soda, and salt in a separate bowl.
- Incorporate the dry ingredients into the wet mixture, stirring until a smooth dough forms.
- Stir in the maraschino cherry juice and chopped maraschino cherries until evenly distributed.
- Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the baking sheet with about 2 inches of space between each.
- Flatten each dough ball slightly with the back of a spoon.
- Bake for 10-12 minutes until the edges are golden brown, then cool completely on a wire rack.
- In a large bowl, beat together the softened butter and powdered sugar for the frosting until creamy.
- Mix in the strawberry puree and vanilla extract until fluffy, and add pink food coloring if desired.
- Spread a layer of frosting on each cooled cookie and garnish with halved maraschino cherries or diced strawberries.
Notes
You can substitute maraschino cherries with fresh cherries for a more natural flavor, and these cookies can be frozen without frosting for up to three months.
