Ingredients

  • 3/4 cup (150 g) granulated sugar
  • 1 large egg
  • 1/2 teaspoon almond extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup (80 ml) maraschino cherry juice
  • 1/2 cup (75 g) chopped maraschino cherries
  • For the Strawberry Frosting:
  • 1/2 cup (115 g) unsalted butter, softened
  • 2 cups (250 g) powdered sugar
  • 2–3 tablespoons strawberry puree (or strawberry jam)
  • 1/2 teaspoon vanilla extract
  • Pink food coloring (optional)
  • For Garnish:
  • Halved maraschino cherries or diced strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and almond extract, mixing until well combined.
  4. Whisk together the all-purpose flour, baking powder, baking soda, and salt in a separate bowl.
  5. Incorporate the dry ingredients into the wet mixture, stirring until a smooth dough forms.
  6. Stir in the maraschino cherry juice and chopped maraschino cherries until evenly distributed.
  7. Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the baking sheet with about 2 inches of space between each.
  8. Flatten each dough ball slightly with the back of a spoon.
  9. Bake for 10-12 minutes until the edges are golden brown, then cool completely on a wire rack.
  10. In a large bowl, beat together the softened butter and powdered sugar for the frosting until creamy.
  11. Mix in the strawberry puree and vanilla extract until fluffy, and add pink food coloring if desired.
  12. Spread a layer of frosting on each cooled cookie and garnish with halved maraschino cherries or diced strawberries.

Notes

You can substitute maraschino cherries with fresh cherries for a more natural flavor, and these cookies can be frozen without frosting for up to three months.
