- 1 3/4 cups powdered sugar
- 1 cup almond flour
- 4 large egg whites
- 1/4 tsp cream of tartar
- 1 cup granulated sugar
- 1/2 tsp vanilla extract
- Pink food coloring (optional)
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar (for filling)
- 1/4 cup strawberry jam
Instructions
- Preheat the oven to 300°F (150°C) and prepare your baking sheets by lining them with parchment paper.
- Measure and sift together the powdered sugar and almond flour in a mixing bowl.
- Beat the egg whites in a clean bowl with the cream of tartar until soft peaks form, then add the granulated sugar and continue to beat until stiff peaks form.
- Fold in the vanilla extract and a few drops of pink food coloring, if desired.
- Gently fold the dry mixture into the meringue until the batter is smooth.
- Transfer the batter into a piping bag and pipe small circles onto the prepared baking sheets.
- Tap the baking sheets on the counter to release air bubbles.
- Let the piped macarons sit at room temperature for 30-60 minutes to form a skin.
- Bake the macarons for 15-18 minutes, then let them cool completely on the sheets.
- Beat the softened butter with powdered sugar until light and fluffy, then fold in the strawberry jam.
- Pipe the filling onto half of the macarons and sandwich them together.
