Description

A rich and velvety cheesecake made with cream cheese, mascarpone, and fresh strawberries, perfect for dessert lovers.

Ingredients

Scale
  • 1 ½ cups crushed digestive biscuits or graham crackers
  • ¼ cup melted butter
  • 8 oz cream cheese, softened
  • 8 oz mascarpone cheese
  • ½ cup powdered sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • ¼ cup strawberry purée
  • ½ cup fresh strawberries, chopped
  • 2 tbsp sugar
  • 1 tbsp lemon juice

Instructions

  1. Mix the crushed digestive biscuits or graham crackers with the melted butter in a bowl until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of a springform pan and refrigerate.
  3. Combine the softened cream cheese and mascarpone in a large mixing bowl and beat until smooth.
  4. Add the powdered sugar, heavy cream, and vanilla extract, and mix until airy.
  5. Fold in the strawberry purée gently to retain lightness.
  6. Pour the filling over the chilled crust and spread it evenly.
  7. Refrigerate the cheesecake for about four hours or until set.
  8. Prepare the strawberry topping by mixing fresh strawberries, sugar, and lemon juice, and let it sit for 30 minutes.
  9. Remove the cheesecake from the springform pan and top with the strawberry mixture before serving.

Notes

Ensure all ingredients are at room temperature for easier blending. Chilling time is crucial for the cheesecake to set properly.
