Description

Delight in these Strawberry Cheesecake Stuffed Cookies that combine a rich, creamy filling with a melt-in-your-mouth cookie exterior, perfect for any occasion.

Ingredients

Scale
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1¾ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ½ cup freeze-dried strawberries, crushed
  • 4 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • ¼ cup strawberry jam or puree

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and a teaspoon of vanilla extract until well combined.
  4. Whisk together the all-purpose flour, baking soda, baking powder, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet mixture, mixing just until combined.
  6. Fold in the crushed freeze-dried strawberries.
  7. Make the filling by beating the softened cream cheese, two tablespoons of sugar, a teaspoon of vanilla extract, and the strawberry jam until smooth.
  8. Scoop about one tablespoon of cookie dough, flatten it, and place a spoonful of filling in the center; cover with another tablespoon of dough.
  9. Place the stuffed cookies on the baking sheet with space in between.
  10. Bake for 10-12 minutes or until the edges are golden brown.
  11. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Ensure butter and cream cheese are at room temperature for best results. Chilling the dough can help prevent cookies from spreading during baking.
