Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and a teaspoon of vanilla extract until well combined.
- Whisk together the all-purpose flour, baking soda, baking powder, and salt in a separate bowl.
- Gradually add the dry mixture to the wet mixture, mixing just until combined.
- Fold in the crushed freeze-dried strawberries.
- Make the filling by beating the softened cream cheese, two tablespoons of sugar, a teaspoon of vanilla extract, and the strawberry jam until smooth.
- Scoop about one tablespoon of cookie dough, flatten it, and place a spoonful of filling in the center; cover with another tablespoon of dough.
- Place the stuffed cookies on the baking sheet with space in between.
- Bake for 10-12 minutes or until the edges are golden brown.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
