  • 1/4 cup sour cream
  • 1/2 cup fresh strawberries, chopped
  • 1 cup crushed cornflakes
  • 1/4 cup white chocolate chips (optional)

Instructions

  1. Start your Strawberry Cheesecake Crunch Bites by preparing the crust. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until well-mixed. This crumbly mixture should hold together when pressed.
  2. Next, take mini muffin tins or silicone molds and firmly press the mixture into the bottom to form small crusts. Bake in a preheated oven set to 350°F (175°C) for 8 minutes. Once baked, set them aside to cool completely.
  3. While the crust cools, prepare the cheesecake filling. In a medium bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and sour cream. Using a hand mixer, beat the mixture on medium speed until it’s smooth and creamy with no lumps.
  4. Spoon the cream cheese filling into the cooled crusts, using a small spatula or a piping bag for neatness. Make sure to fill each crust evenly.
