Instructions
- Preheat your oven to 350°F (175°C) and prepare a mini muffin tin with liners or grease.
- Combine the graham cracker crumbs, granulated sugar, and melted butter in a bowl.
- Press about a tablespoon of the mixture into each muffin well, creating a crust.
- Bake for 5-7 minutes until golden and fragrant, then cool.
- Beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Add the sour cream and blend until smooth, then spoon into the cooled crusts.
- Mix granola, pecans, and melted butter, then sprinkle over each cheesecake bite.
- Bake for another 8-10 minutes until golden.
- Toss diced strawberries with granulated sugar and let sit for 5-10 minutes.
- Let the bites cool fully before topping with strawberries.
