- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract

- 1 tbsp all-purpose flour
- 1 1/2 cups fresh strawberries, diced
- 1/4 cup granulated sugar (for topping)
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 325°F (165°C).
- Combine graham cracker crumbs, sugar, and melted butter in a medium bowl.
- Press the mixture into the bottom of a greased 9×13 inch baking pan.
- Beat the softened cream cheese with sugar in a large bowl until smooth.
- Add eggs one at a time, beating well after each addition.
- Stir in vanilla extract, sour cream, and flour until well combined.
- Pour the cheesecake filling over the crust and spread evenly.
- Bake for 30-35 minutes until the center is set and edges are lightly golden.
- Cool in the pan until room temperature, then refrigerate for 2 hours.
- Combine diced strawberries, sugar, and lemon juice in a saucepan and cook over medium heat for 5-7 minutes.
- Top the chilled cheesecake with the strawberry mixture and slice into squares to serve.
