Description

A delightful Green Velvet Cake perfect for St. Patrick’s Day celebrations, featuring a rich velvety texture and sweet cream cheese frosting.

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups vegetable oil
  • 3 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1 tablespoon green food coloring
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare two 9-inch round cake pans by greasing with butter and dusting with flour.
  3. Blend together the flour, baking soda, baking powder, and salt in a medium bowl; set aside.
  4. Combine the sugar and vegetable oil in a large mixing bowl, beating until well mixed.
  5. Crack in the eggs one by one and mix thoroughly after each addition. Then add the vanilla extract.
  6. Incorporate the dry ingredients with the buttermilk, alternating between them, mixing gently until just combined.
  7. Add the green food coloring and mix to achieve your desired shade.
  8. Divide the batter evenly between the prepared pans and smooth the surface.
  9. Bake for 25-30 minutes, checking for doneness with a toothpick.
  10. Cool the cakes in the pans for about 10 minutes, then transfer to a wire rack.
  11. Prepare the frosting by beating together cream cheese and butter until creamy; gradually add powdered sugar, vanilla, and salt.
  12. Spread frosting on top of one cake layer, place the second layer on top, and frost the entire cake.
  13. Decorate with green sprinkles or shamrock decorations.

Notes

Ensure all ingredients are at room temperature for the best texture. Grease and flour pans thoroughly to avoid sticking.
