Ingredients

  • 2 chicken breasts (sliced into tender, juicy pieces)
  • 8 oz pasta (your choice, e.g., fettuccine, penne, or spaghetti)
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes (packed in oil, chopped)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to the package instructions until al dente, about 8-10 minutes.
  2. Drain the pasta and set it aside.
  3. Heat olive oil in a large skillet over medium heat. Add the sliced chicken, seasoned with salt and pepper, and cook until golden brown and no longer pink, about 6-7 minutes. Remove the chicken and set it aside.
  4. Sauté minced garlic in the same skillet for about a minute.
  5. Add sun-dried tomatoes and fresh spinach and cook until the spinach wilts, about 2-3 minutes.
  6. Pour in the heavy cream and simmer gently, thickening the sauce.
  7. Stir in grated Parmesan cheese until melted and combined. Adjust seasoning if needed.
  8. Toss in the cooked pasta and chicken, mixing until everything is well coated in the sauce.
  9. Garnish with fresh basil and additional Parmesan cheese if desired.
