- 2 chicken breasts (sliced into tender, juicy pieces)
- 8 oz pasta (your choice, e.g., fettuccine, penne, or spaghetti)
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes (packed in oil, chopped)
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to the package instructions until al dente, about 8-10 minutes.
- Drain the pasta and set it aside.
- Heat olive oil in a large skillet over medium heat. Add the sliced chicken, seasoned with salt and pepper, and cook until golden brown and no longer pink, about 6-7 minutes. Remove the chicken and set it aside.
- Sauté minced garlic in the same skillet for about a minute.
- Add sun-dried tomatoes and fresh spinach and cook until the spinach wilts, about 2-3 minutes.
- Pour in the heavy cream and simmer gently, thickening the sauce.
- Stir in grated Parmesan cheese until melted and combined. Adjust seasoning if needed.
- Toss in the cooked pasta and chicken, mixing until everything is well coated in the sauce.
- Garnish with fresh basil and additional Parmesan cheese if desired.
