Description

A delightful casserole combining spinach and feta cheese for a comforting and nutritious meal.


Ingredients

  • 3 large Eggs, beaten
  • 2 cups Cottage Cheese
  • 10 ounces Frozen Chopped Spinach, thawed and drained
  • 1/3 cup Crumbled Feta Cheese
  • 1/3 cup Diced Sweet Onion
  • 1/4 cup Melted Butter
  • 2 tablespoons Freshly Grated Parmesan Cheese
  • 1/8 teaspoon Black Pepper
  • 1/8 teaspoon Garlic Powder
  • A dash of Nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 1 1/2-quart casserole dish with cooking spray or butter.
  3. Mix together eggs, cottage cheese, spinach, feta, sweet onion, melted butter, Parmesan, black pepper, garlic powder, and nutmeg in a large bowl.
  4. Transfer the mixture to the greased casserole dish, spreading it evenly.
  5. Bake uncovered for about 40-45 minutes until set and lightly browned on top.
  6. Allow to cool for 5-10 minutes before serving.
  7. Serve warm and enjoy!

Notes

For added flavor, incorporate fresh herbs or experiment with different cheeses. Leftover vegetables can also be added for a heartier dish.
