- 3 large Eggs, beaten
- 2 cups Cottage Cheese
- 10 ounces Frozen Chopped Spinach, thawed and drained
- 1/3 cup Crumbled Feta Cheese
- 1/3 cup Diced Sweet Onion
- 1/4 cup Melted Butter
- 2 tablespoons Freshly Grated Parmesan Cheese
- 1/8 teaspoon Black Pepper
- 1/8 teaspoon Garlic Powder
- A dash of Nutmeg
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 1 1/2-quart casserole dish with cooking spray or butter.
- Mix together eggs, cottage cheese, spinach, feta, sweet onion, melted butter, Parmesan, black pepper, garlic powder, and nutmeg in a large bowl.
- Transfer the mixture to the greased casserole dish, spreading it evenly.
- Bake uncovered for about 40-45 minutes until set and lightly browned on top.
- Allow to cool for 5-10 minutes before serving.
- Serve warm and enjoy!
Notes
For added flavor, incorporate fresh herbs or experiment with different cheeses. Leftover vegetables can also be added for a heartier dish.
