Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Combine the corn kernels, shredded cheese, cream cheese, jalapeños, cilantro, chili powder, cumin, garlic powder, salt, and pepper in a large mixing bowl.
- Stir in the beaten egg, creating a mixture that holds everything together.
- Scoop about 1 tablespoon of the mixture and roll it into small balls.
- Roll each ball in the crushed tortilla chips to create a crunchy coating.
- Arrange the bites on the prepared baking sheet, giving each some space.
- Bake in the oven for 18-20 minutes until golden brown and crispy.
- Let cool for about 5 minutes before serving with lime wedges, salsa, or spicy mayo.
Notes
For added flavor, consider slow-roasting the corn and sautéing the jalapeños. Use fresh corn when in season and ensure cream cheese is at room temperature.
