  • Mini phyllo cups or wonton wrappers (optional)
  • Lime wedges (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine the corn kernels, shredded cheese, cream cheese, jalapeños, cilantro, chili powder, cumin, garlic powder, salt, and pepper in a large mixing bowl.
  3. Stir in the beaten egg, creating a mixture that holds everything together.
  4. Scoop about 1 tablespoon of the mixture and roll it into small balls.
  5. Roll each ball in the crushed tortilla chips to create a crunchy coating.
  6. Arrange the bites on the prepared baking sheet, giving each some space.
  7. Bake in the oven for 18-20 minutes until golden brown and crispy.
  8. Let cool for about 5 minutes before serving with lime wedges, salsa, or spicy mayo.

Notes
