- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chipotle in adobo sauce, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat olive oil in a large skillet over medium heat and add diced onion. Sauté for about five minutes until translucent.
- Stir in minced chipotle, cumin, smoked paprika, and chili powder. Add salt and pepper to taste and allow spices to blend.
- Add ground beef, breaking it apart, and cook for 6-8 minutes until browned. Drain excess fat and simmer for another 2-3 minutes.
- Warm corn tortillas in a skillet for 30 seconds on each side.
- Fill each tortilla with beef mixture, and top with lettuce, tomatoes, cheese, avocado, and garnish with cilantro. Serve with lime wedges.
Notes
Add a splash of lime juice to the beef mixture for extra brightness. Customize with your favorite toppings like sour cream or salsa.
