Description

Vibrant tacos bursting with flavor from seasoned ground beef infused with smoky chipotle and spices, wrapped in warm corn tortillas.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chipotle in adobo sauce, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat and add diced onion. Sauté for about five minutes until translucent.
  2. Stir in minced chipotle, cumin, smoked paprika, and chili powder. Add salt and pepper to taste and allow spices to blend.
  3. Add ground beef, breaking it apart, and cook for 6-8 minutes until browned. Drain excess fat and simmer for another 2-3 minutes.
  4. Warm corn tortillas in a skillet for 30 seconds on each side.
  5. Fill each tortilla with beef mixture, and top with lettuce, tomatoes, cheese, avocado, and garnish with cilantro. Serve with lime wedges.

Notes

Add a splash of lime juice to the beef mixture for extra brightness. Customize with your favorite toppings like sour cream or salsa.
